Leafy vegetables aren’t the only way to add healthy greens to your diet. Add a nutritious avocado to your noodle dish today.

The jury is still out on whether avocados are an aphrodisiac but that hasn’t stopped Latin Americans continuing their tradition of wrapping up the healthy fruit and giving it as a wedding gift. Meanwhile Brazilians add the fruit to their ice cream and Filipinos puree avocados with milk and sugar to make a sweet dessert drink.

But here in Australia the avocado is still most popular as a savoury treat and in this recipe it has been given an Asian flavour…


Serves 4

  • 2tsp sesame oil
  • 2tbsp vegetable oil
  • 2tbsp ginger (peeled and cut into thin strips)
  • 4 garlic (cloves, sliced)
  • 560g Asian noodle (pre soaked/cooked as per pack instructions)
  • 2tbsp light soy
  • 2tbsp oyster sauce
  • 2 spring onions (sliced)
  • ½ sprig coriander leaves


Heat the sesame oil and the vegetable oil together in a wok or a large fry pan. Add the ginger and garlic and fry gently until transparent. Add the noodles and stir fry for a further minute or two.

Cut the avocado in half, remove the seed and skin and cut the flesh into chunks. Add the onion, avocado, soy and oyster sauce to the noodles and stir fry for a further minute or until all ingredientsare combined and hot.

Serve and garnish with coriander leaves. For a variation to this recipe try adding chicken or prawns (as seen in this picture).
