Mat Fury, the former head chef at Brisbane’s acclaimed Restaurant Two, is taking over the kitchen at Queensland’s only children’s hospice, Hummingbird House.

The appointment of Fury as head chef will give families an opportunity to relax and reconnect over a delicious breakfast, lunch and dinner.

“I am looking forward to seeing families around the dining table, sharing a good home-prepared meal,” Fury says.

“Think of freshly baked bread, lasagne, chicken schnitzel and delicious fish and chips. We will also be offering fresh fruit salads and nutritious smoothies.”

Fury is also excited about some of the culinary special touches Hummingbird House will be able to offer families.

“We have coffee machines generously donated by DiBella in all Family Accommodation suites, a BBQ for sausage sizzles on our rooftop terrace, and we are planning to plant a herb garden later this year,” he says.

“I am honoured to have joined the Hummingbird House team, and be a part of delivering this much needed service for Queensland families.”

Fury’s career began at the age of 18, when he worked as a dish washer at a small Italian restaurant in Morningside. He was soon offered an apprenticeship as a chef, and eventually co-opened his own restaurant, Bespoke, before moving to Restaurant Two.

Fury’s appointment at Hummingbird House has been made possible as part of a generous grant of $130,000 from the Newman’s Own Foundation to support the Hummingbird House hospitality program. The program supports families by ensuring they have access to 24/7 breaks, including providing all meals.

“When I applied for the chef position at Hummingbird House I was at a point where I was looking for a way to give back,” Fury says.

“I will forever be grateful to Newman’s Own Foundation for giving me this amazing opportunity to help support families and children.”
