Sweets are the last memory your guests will have of your meal, the one they’ll remember as the taste lingers, so why not make it an amazing one?
Fresh from the 2013 MasterChef kitchen, British-born Lucy Wallrock has written Simply Sweet: A Baking Book for the Everyday Cook. Lucy’s innate love for sweets and baking — she’ll always look at the dessert menu first whenever she goes out to dinner — has inspired her to create a dessert book that anyone who is scared of baking will find easy to use, with recipes that don’t take hours to make.
To celebrate the book’s release this month, Lucy has shared her recipe for salted caramel brownies with us.
1 quantity Salted Caramel Sauce
7 oz/200 g unsalted butter, chopped into cubes
1 x 7 oz/200g bar dark chocolate, broken into pieces
1 1⁄4 cups (10½ oz/300 g) superfine/caster sugar
2/3 cup (3½ oz/100 g) all-purpose/plain flour
½ cup (1½ oz/45 g) Dutch cocoa powder
Make the Salted Caramel (read Simply Sweet for Lucy's recipe, or follow your own!)
Preheat the oven to 350°F/180°C.
Line a baking tray 11 x 6 in (28 x 17 cm) with baking paper.
Melt the butter and dark chocolate in a saucepan over a low to medium heat, stirring occasionally to ensure the chocolate doesn't burn on the bottom.
Once melted, remove the pan from the heat and let it cool.
Break eggs into a large bowl, add the sugar and whisk by hand until light and fluffy.
When the chocolate mixture is cool, pour it into the egg mixture and then fold them together until combined.
Sift the flour and cocoa powder into the mixture and stir to combine.
Pour half of the brownie mixture into the baking tray. Dot 10 heaped tablespoons of the salted caramel over the top (it may run all over if it's not cool enough, which is OK) and then pour over the remaining chocolate mixture.
Bake for 30-35 minutes or until cooked. You should be able to stick a sharp knife in it and the knife should come out just about clean. Do not overcook!
Once cooked, remove the brownies from the oven and leave to cool before cutting into desired-sized portions.
