Created especially for Oktoberfest Brisbane with a special pesto mayo, the Oktoberfest Burger is a mouth-watering festival favourite.
Ingredients:
Burger ingredients
Serves 1
White hamburger roll
*Pesto mayo, 1-2 teaspoons
Coral lettuce, 1-2 leaves
Tomato, 2-3 slices
Sliced red onions, to taste
*200g beef pattie, grilled
1-2 slices bacon, grilled
Smoky BBQ sauce
Slice of Swiss cheese
½ Frankfurter
Pesto Mayo ingredients
Pesto
1 cup firmly packed fresh basil leaves
1 garlic clove, crushed
50 ml extra virgin olive oil
50g pine nut meal
50g cup finely grated Parmesan cheese
Salt and freshly ground white pepper
Mayonnaise
3 egg yolks
2 teaspoons lemon juice
2 teaspoons Dijon mustard
250ml vegetable oil
Salt and freshly ground white pepper
Method:
Pesto method
Place basil leaves, garlic and extra virgin olive oil into a blender process until finely chopped. Pour into a separate bowl and add Parmesan and pine nut meal. Season with salt and pepper and stir until well combined.
Mayonnaise method
Whisk egg yolks, lemon juice and Dijon mustard in a bowl. Whisk in 1/4 cup of the oil, a few drops at a time – if you add the oil too quickly, the mixture may split. Pour in the remainder of the oil in a thin steady stream, whisking constantly, until thick. Season with salt and pepper.
To make the pesto-mayo, gently mix the two components together.
Burger method
Simply fill your roll with the ingredients above in the order they are listed.
Top with a frankfurter crown by cutting a Frankfurter in half, slice cross wise then dip in hot oil for five seconds to open out.
