Spook friends and family with these delicious Halloween cupcakes!

Ingredients:

200g butter, softened
1¾ cups caster sugar
4 eggs
2¾ cups self-raising flour
1 teaspoon vanilla extract
1 cup (250ml) milk

200g butter, softened
6 cups (900g) icing sugar mixture
½ cup (125ml) milk

Method:

Method – cupcake

  • Preheat oven to 180°C.
  • Line a patty cake pan with patty cases.
  • Cream the butter, sugar and vanilla extract by hand or with an electric beater (preferably). Add the eggs, one at a time, and beat until mixed in.
  • Add the flour and milk in alternate batches and stir with a wooden spoon until mixed in.
  • Spoon mixture evenly among the patty cases.
  • Bake for 15-20 minutes or until cooked through. Remove from oven and transfer to a wire rack to cool completely.

Method - the icing

  • Gradually add the icing sugar to the butter and beat. Add the milk and mix well.
  • Here’s where you get to be creative. Decorate the cupcakes as you like!
  • If you want to use different colours, divide the icing into a number of different bowls and add colour. However, for spiders, chocolate works best!
  • Use a flat knife to spread the icing. Tip: A cup of hot water is good for dipping the knife into if the icing gets a bit thick to spread.
  • Use licorice straps and cut thinly for the spider legs. Create the eyebrows with licorice cuttings.
  • You can also use smarties or jelly beans for the eyes or different coloured icing.
