Ingredients:

Salad

  • 3 small cucumbers, cut in half lengthways and thinly sliced
  • 1 zucchini, grated
  • ½ red bell capsicum, diced
  • 2 tablespoons sesame seeds, roasted
  • 1 teaspoon fresh dill
  • 1 teaspoon salt (optional)

Dressing

  • 2 limes, juiced
  • 1 tablespoon honey
  • ½ teaspoon grated fresh ginger
  • 1 teaspoon salt (optional)

Method:

Salad
Place sliced cucumber in mixing bowl. Add zucchini, red pepper, sesame seeds, dill and salt. Mix gently to combine

Dressing
Place lime juice, honey, ginger and salt into a sealed container, and shake to combine.
Drizzle over the salad and serve immediately.
