The food truck phenomenon has exploded! Every Friday, we take a closer look at one of your favourite trucks. Today, the spotlight falls on The Wiener Haus!
Owner/Chef: Paddy Skicko & Jesse Garlick.
Cuisine style: Authentic German smoked sausages combined with a New York street food style topping.
Home suburb: Mermaid Beach, Gold Coast.
Time in business: Six months.
Why food trucks?
The opportunity to work outside and enjoy great food with the amazing weather we get here in Queensland.
Is running a food truck as much fun as it looks, or is it just bloody hard work?
It is definitely hard work, but it’s so worth the effort. We have a blast working with our Wieners and stirring up customers with a bit of good ol’ fashioned tongue in cheek.
What were you doing before you got your food truck? What’s your background in food?
Jesse currently runs a cafe in Mermaid Beach (Skull and Bones Espresso Boutique) and I’ve been in and around the industry for a number of years and knew it was time to take the leap.
There are food trucks popping up everywhere these days – what sets yours apart?
The branding and style of The Wiener Haus trailer complements our menu, making having a wiener with us an experience and taste bud treat.
What are the relationships like between food truck operators? Is everybody friendly, or are they out for blood?
So far, so good for us. Everyone seems to be working hard and friendly.
What’s the most popular item on your menu?
We don’t really have a “most popular” because we offer such a mix and match menu — everything seems to go crazy and we cater for each individual’s taste.
What’s your favourite item on the menu?
Cheesy Kranksy w/ Linda Lovelace would be my favourite. Something about mustard and pickles with melting cheese just works for me.
Where do you source your ingredients from? Do you buy local?
We have a German Butcher in Brisbane and a supply of buns baked here on the Gold Coast.
What sort of stuff do you cook at home? Is it anything like what you cook on the truck?
I’ve always been into this style of eating but honestly these days my better half looks after that. She’s a great cook and keeps me well fed.
Which suburbs do you usually operate in? Where’s your most popular stop?
All across the Gold Coast, but lately our Friday night at Bob Jane Tmarts on the highway in Mermaid Beach has been a killer.
How do most people find out about your truck?
Word of mouth and social media, mainly our Instagram account.
Why do you think food trucks have become so popular?
I think with us being able to come to you, it’s like the party just rolls in and along comes the good times. We have been doing a lot of engagement and birthday parties and it just offers a gourmet food service picnic style and people are digging that.
Favourite music to listen to in the truck?
We just like to have anything upbeat and fresh to create that happy vibe.
Do you harbour any dreams of opening a brick-and-mortar restaurant?
Not at the moment. We are loving the freedom and scenery changes, it makes work different every time and super enjoyable.
If your Food Truck was a Transformer, its name would be…
Transformer? I’m not sure, but if it was a dinosaur it would be the Wienersauras.
Any words of wisdom for those wanting to run their own food truck?
Work hard and be unique.
Where can we find you over the next few weeks?
We are down at Stone & Wood Brewery (4 Boronia Place, Byron Bay) next Friday night for a new beer launch and Halloween which should be a cracker. Otherwise just check our Instagram for all other locations and upcoming events!
