Whether you’re a lover of the flat white, an ardent espresso fan or favour a flavoured coffee concoction, there is no denying that coffee, in all its forms, fuels the world. And with that comes the tough task of deciding where to drink your cup. So we’re on the hunt for Brisbane’s most popular baristas and coffee roasters.

This week we popped by Kettle & Tin in Paddington to chat to Asa Boardman about his coffee skills, his secret weapon behind his coffee-making techniques and how he ended up behind the machine.

What exactly do you do?

Hassle wait staff, drive my managers crazy, drink all the beer … and make coffee. I’m also responsible for the operation of my venue in Paddington. Which is mainly due to the great work of my staff.

How did you end up on this path and what does making coffee mean to you?

I started working as a dish pig at a young age, and discovered the joys of beer after work, hence hangovers, hence coffee. The rest is a blurry history.

Favourite way to drink coffee?

Espresso but a good aeropress does the trick too.

Where would you most like to stop, sit and sip on a coffee?

Anywhere where you can see the beach.

If you could make a coffee and have a chinwag with anyone in the world – who would it be?

The President of Uruguay, José Mujica. That guy rocks, look him up.

What makes your coffee different to others?

That is a big question, but I’d definitely have to say underpants, and clever roasting techniques. But definitely underpants.

Tips for always getting a good coffee?

Smile at the person serving you.

Anything else readers should know?

Try different brewing techniques, you’ll never know the benefits or different flavour profiles of varying beans if you don’t try a pour over, filter or aeropress etc. And wear clean underpants.
