From the critically-acclaimed Bacchus Restaurant at South Bank comes Soleil Pool Bar, a bespoke bar of rich gold and white hues, combined with warm timber features which wrap around the pool and the space has been peppered with carefully selected furnishings.

Commanding pedigree position on the Podium Level overlooking South Bank’s cosmopolitan Grey Street, the bar seamlessly and creatively welcomes the outdoors in, and the indoors out. It also features an enormous LED ceiling screen as the entry statement, a space of moving vision which sets the scene of the promise within.

While Soleil Pool Bar will celebrate its official rising on Friday October 17, the team are pouring cocktails from TODAY! And oh my, don’t they all sound delicious.

The Soleil Collection – a carefully crafted compendium of cocktails and punches, sit side by side a signature collection of fine wines, beers from around the world, boutique offerings and stunning libations. A drink at Soleil may be the colours of the sun to be enjoyed under the stars, or it may be classic amber from breweries near or far. It may be a revered wine, or, it may be a fruit mocktail to sip in the sunshine.

Passion is the Colour Red

Fiery red, as delicate as a flower and with a burst of delicious sweet and sour, Passion is the Colour Red might just become a Soleil signature. Featuring a delicate blend of Belvedere vodka, vanilla and Prosecco married with rose and raspberry sorbet, Passion is the Colour Red is a libation to elicit passion and excitement, anywhere! As a final flavour-filled offering, the glass is spritzed with a house-made concoction of gorgeously fragrant rose water.

The Black Barrel Inquisition

This is a particularly theatrical potion. Inspired by tales of the distilleries of old, it sees Mount Gay black barrel rum and All Saints Rutherglen Muscat stirred down with whisky barrel and chocolate bitters, served with star anise, orange and cinnamon smoke and served with a cloche holding captive the delicious whisky smoke.

The food choices are also delectable. Reflecting the need for fresh, seasonal and light dining options, The Soleil Pool Bar Menu focuses on shared and smaller plates, allowing flavour, aroma and colour to shine.
