Brisbane food stars Brad and Angelica Jolly have spread their wings yet again with a new restaurant, The Palms, set to open at Westfield Garden City in mid September.

With two Brisbane food outlets under their belt, refined river front eatery Alchemy Restaurant + Bar and G-Doggz, specialising in gourmet hot dogs in Fortitude Valley, Brad and Angelica Jolly are branching out with another offering, this time in the newly redeveloped Westfield Garden City at Mt Gravatt.

This follows a trend of enhanced dining opportunities at major shopping centres across Brisbane, turning former gourmet deserts into gourmet delights.

Designed as a Mediterranean bar and grill, The Palms sports a Josper oven that has been imported from Spain which Angelica Jolly says will play a vital role.

“This particular oven cooks food at a very high heat which chars the outside and gives it a smoky flavour,” says Angelica. “We will be use a Gidgee hardwood which will give wood flavour to the food and keep the smoke clean.

We believe in ingredients that are fresh and produce that is honest, cooked with little fuss.

The menu concept at The Palms focuses on snack style food – sharing plates with a large offering from the grill. Our philosophy is ‘cooking is best done by a Josper wood char grill oven’!”

Head chef at The Palms will be Josh Wilby. Josh worked with Brad and Angelic as a sous chef for five years before moving to London, where he was head chef at Smiths of Smith Fields. Working alongside John will be Sam Petersen, who has also worked on the floor at Alchemy and then at 1889 Enoteca.

When the restaurant opens in mid September, you’ll be able to enjoy casual dining with breakfast, lunch and dinner cooked on the modern Mediterranean barbecue grill and soak up the relaxed, beach-like atmosphere at The Palms.

“We want our guests to feel like they are on a holiday the minute they walk into the restaurant,” Angelica says.
