Brisbane’s dessert king, Martin Duncan of Freestyle Tout at Emporium, has gone healthy and some of his desserts have followed.

Long loved for his delicious desserts and more recently for his full flavoured mains, Martin Duncan has been branching into wholesome cuisine that offers both great flavour and healthy ingredients at Freestyle Tout.

I put Martin in the hot seat and asked him why he has embraced the green revolution in food.

You’ve got a lot of healthy options on your new menu – what inspired the change?

I was inspired by a recent trip overseas. Particularly in London, I saw a move to more of a vegetable focus and this led me to change my own diet and eating regime. I then played with vegan items to incorporate more of these options on the menu. Many of our gluten free customers are grateful for Freestyle’s savoury and dessert options, and I thought it would be nice to offer more to our vegan clients.

How did you decide what healthy items to include?

I tried a lot of things before they went on the menu and my chefs are always playing with new ideas and recipes.

Which ones are your favourites?

Our Green Machine Smoothie, plus The Super Green Kale Salad, are my current favourites. Also the Chocolate Coconut Cheesecake has always been a winner for me!

Is this what you eat at home too?  Has it changed how you feel?

At home I always start my day with a Green Machine Smoothie which includes kale, apple, banana, pea protein, spirulina, flaxseed oil and chia seed. This seems to give me energy for my crazy days.

Are there still some naughty things on the menu?

We still have Freestyle classic desserts such as the Sticky Date Pudding which has been on the menu for 17 years, Creme Brûlée and Apple and Rhubarb Crumbles. Yes, they are naughty, but still very yummy.

What are the most popular menu items at the moment?

Our patrons are embracing the healthy desserts and the vegan, gluten free, raw and sugar free desserts are getting to be as popular as our Freestyle Classic desserts. The share stack also is popular with choice of tapas, chippies and healthy garden salad.

Well, if anyone can satisfy Brisbane’s dessert taste buds it would be Martin, and it seems he has the mix just right.  Time to pop in and try one for myself, I think.
