Why food trucks?

Probably the flexibility and freedom you have. You’re always doing something new and interesting.

What were you doing before you got your food truck? What’s your background in food?

Music, catering and food writing. We also conduct a lot of DIY food/drink projects with like-minded friends, involving things like charcuterie, wine, gin, foraging and the like.

What’s the most popular item on your menu?

The Rick Reuben. We make our pastrami from scratch. It’s a pretty special sandwich and it never lasts long.

What’s your favourite item on the menu?

Probably the Carolina. Braised pork shoulder, cooked until its fall-off-the-bone tender, then pulled into meaty shreds. Doused with vinegar sauce and eaten with apple and cabbage slaw. Delicious.

Which suburbs do you usually operate in? Where’s your most popular stop?

We are still new in the game, but we have been keeping it inner city so far. We’re keen to go anywhere, really. Our favourite spot is Wandering Cooks in South Bank, it’s a very cool venue.

How do most people find out about your truck?

Most likely online.

Why do you think food trucks have become so popular?

It’s a new, interesting and quick way to serve food. It’s usually super tasty, too.

Do you harbour any dreams of opening a brick-and-mortar restaurant?

We would love to one day bring our separate interests together into a bricks and mortar store, perhaps a charcuterie bar.
