Thursday 27th March marks the launch of the exciting new cookbook ‘Four Kitchens’ by Colin Fassnidge

On March the 27th, chef Colin Fassnidge will be coming to Brisbane restaurant e’cco bistro to launch his very first cookbook, Four Kitchens. Fassnidge is famous for two successful restaurants in Sydney – Four in Hand and 4Fourteen; his appearance as a guest judge on My Kitchen Rules; and most importantly, for his ‘nose-to-tail’ cooking ethos.

Nose-to-tail cooking is becoming increasingly more popular in today’s restaurants, and nobody does it better than Fassnidge. This Sydney-based, Irish born chef has been making waves on the culinary scene since starting with Sydney restaurant Four in Hand since 2005.

Famous for the ‘Dining Room’, spectacular meat dishes and distinct British feel, the restaurant has received countless accolades from the country’s toughest critics. 4Fourteen, found in Sydney’s trendy inner-city suburb of Surry Hills, has been another success story, exciting diners and critics alike with creative meat dishes to share, delicate seafood dishes, impeccably cooked sides and deconstructed desserts.

If these restaurants are anything to go by, Four Kitchens promises to be on the top of my next purchase list. Diners going along to the launch will be lucky enough to try three of the dishes found in the book – an entrée of crab, fennel custard, confit fennel and hazelnuts; a main of oxtail with risotto and horseradish cream, and a white chocolate sandwich for dessert.
