Rachael Finch, ambassador for Australian summer stone fruits, gives bmag a little insight into her personal food philosophy, keeping healthy and the stone fruits season.

Rachael Finch, model and TV presenter, gave birth to her first child in September last year, and has since begun a ‘keep fresh, fit and healthy’ campaign combining fitness techniques and healthy recipes.

In her conversation to bmag, she confessed her love for stone fruits, and how to make the most of them in a healthy diet, over the summer season.

What’s your personal food philosophy?

I believe in the age-old saying, ‘you are what you eat’. It’s incredibly true, especially in our modern world. It’s vital that we feed our body with the right foods.

What sort of foods did you stick to during pregnancy to keep healthy?

During pregnancy, I tried to incorporate everything into my diet, except raw fish or cheeses. Nutrients and vitamins were my focus, as well as minimising sugars, refined carbs and trans fats.

What’s your favourite ingredients to work with in the kitchen?

I try to use what’s in season. Right now, I’m all about stone fruits for summer.

Avocados are also great; diced up and added to anything. Also goji berries – it’s easy to squeeze them in to a meal.

Favourite meal to cook at home?

Grilled salmon. I absolutely love salmon. If I’m having guests over, I’ll cook the salmon with vanilla bean. Otherwise I’ll cook it simply with stir-fried veggies.

Try adding peach to a meal – you’ll be surprised at the difference they can make!

Why stone fruits; what do you love about them?

Stone fruits are so juicy. I love eating them fresh and raw as a snack. They’re also so healthy, and a good source of vitamins and minerals.

Stone fruits are incredibly versatile; get creative and use them in desserts.

This summer, I’ll make a fair dent in the 100,000 tonnes of nectarines, plums, apricots and peaches our growers produce annually!
