Easy, home-made glazes for your Christmas Ham – for all experience levels

A Christmas Ham is nothing without a brush or lather of home-made glaze. We have compiled a list of family-favourites, likely to have been passed along the family tree. Turn your Ham from simple to delicious this Christmas time.

Instructions (for all recipes)

  1. Make a slit in the rind of ham
  2. Trim the rind and fat, leaving 1cm of fat on the ham
  3. Make diagonal slices along the ham’s surface, making sure to slice the fat and not the meat
  4. Mix all the glaze ingredients in a bowl
  5. Brush over the ham, and occasionally add extra glaze as it cooks.

8 Home-made Ham Glazes

1. Honey & Brown Sugar Glaze
2/3 cup brown sugar
3 tbsp honey
1 tbsp mustard

2. Ginger Glaze
1 tsp dry ginger
1 tsp dry mustard
1 ½ cups brown sugar
canned pear or peach syrup
1 tsp lemon juice

3. Peach & Rum Glaze (Curtis Stone)
2 tbsp olive oil
1 small brown onion
3 star anise
1 tsp ground cardamom
2 yellow peaches, stone removed & finely diced
½ cup dark rum
½ cup white wine vinegar
1 cup brown sugar

4. Pineapple Glaze
1 ½ cup pineapple juice
½ cup brown sugar
½ cup lime marmalade
¼ cup Dijon mustard

5. Maple Glaze
1 tbsp mustard
2/3 cup maple syrup

6. Cola Glaze
1 cup dark brown sugar
¾ cup carbonated cola drink

7. Apricot Glaze
1 cup apricot jam
1 tbsp ground cinnamon
½ cup brown sugar
1 ½ cups sherry (optional)
1 tbsp mustard

8. Lime Glaze
1 cup brown sugar
2 tsp ground ginger
2 tbsp Dijon mustard
1 lime, finely grated & juiced
2 tbsp rum
½ white sugar
½ cup water
3 limes, to decorate ham
